Chinese Pork and Duck Liver Sausages, are named amongst its famed dishes here -
Today’s Trivial: These were in fact originally invented in Canton in Toi San (台山) region,
just north of Hong Kong region. Certainly news to me…
Roast Items aren’t too shabby here -
However I normally concentrate on the other 2 signature dishes..
Their Set Meal is probably quite expensive by Hong Kong’s Standards,
even when compared to the Michelin 2 Star restaurant’s version, @ Tim's Kitchen
Pork Meat and Duck Liver Sausage with Rice (膶腸飯) -
One cannot deprive themselves from this true delicacy. Many people secretly claim this to be the best version within Hong Kong, so much so that it has over-shadowed its Snake Soup over the years. I cannot disagree with this verdict. It is still crunchy and gamey good, but I distinctly remembered this to be more tastier in the past. Have they changed suppliers? ~ 7.5/10
5 Snakes Soup (太史五蛇羹) -
This resembles a Cantonese Medicinal soup. And just like Game Meats in Europe, it’s a must order in Hong Kong when we arrive at Late Autumn & Winter. The version here is more of a starched up porridge than a soup as per Modernised versions, but the snakes and chicken meats taste were fairly bold and aromatic, together with the influence of Mushrooms, Chrysanthemum, Kaffir Lime Leaf and Crisps ~ 6.9/10
Boiled Lettuce with Oyster Sauce (蠔油西生菜) -
This is not the Chinese Lettuce version but the cheaper variety. Not memorable usually, but made pretty well here as its cooked in Snake broth apparently ~ 8/10
Fried Sticky Rice with Preserved Meats and Peanuts (生炒糯米飯) -
Relatively speaking, whilst not outstanding, this is already quite enjoyable within Hong Kong, as most versions are overly wet sticky and bland. The one here was done to acceptable standards ~7/10
A few more potent Snake Soups are available on the menu…
I will re-try them again if I don’t end up getting a blood nose.
Always a queue here for so many years, before or after a Michelin Recommendation.
Its not the best in terms of its Snake Soup, nearly everyone locally says that,
but overall it’s the most consistent overall performer and well worth a visit.

For Snake Soup, yes it is slightly more refined there! But the one here has the bolder snake flavours! :D
