UFood organized a Bloggers Cooking Demo with our young pretty chef Kit Mak at her kitchen studio last week – the theme today will be on recipes based on Japanese ingredients !

Hokkaido Scallops with Salmon Ikura roes -
The sauce is made with lime juice, lime zest, soy sauce, yuzu vinegar & wasabi. A slight drizzle of olive oil top the scallops. The presentation is neat and this can be prepared at home.
Kit is Now Heating up the Le Creuset Skillet Pan -
A5 Grade Wagyu Beef 和牛 !
Butchered into 4 pieces from the sirloin muscle.
The Wagyu will be paired with a Japanese Apple & Rum Sauce -
1st, core the Japanese Apples and pour in some Rum wine, then add in a judicious amount of mint, salt, sugar and black pepper. Add half a cup of water then cook the sauce until thickened, or if you prefer it light – use a bit of corn starch to thicken it up instead.
Beef being Grilled using Wagyu Fat and a bit of High Flashpoint Oil hopefully !
Finished Dish of Wagyu with Apple and Rum Sauce -
Just add black pepper and eat !
Preparing Rosemary Apple Crumble -
Add 100g plain flour, 35g brown sugar, 50g oat meal, finely chopped Rosemary and 125g of room temperature diced sugar. Add a pinch of salt and pink peppercorns then use your hands to carefully mix in the crumble.
In the mean time,
Core then half the apples and grill slightly on low heat with oil and a sprinkling of sugar to caramelize. Coat with 1-2 spoonful of corn starch. Top with Crumble mix and bake in 190C oven for around 20-30 minutes.
Rosemary Apple Crumble served like a Dome ! With Cream on the side -
I liked this idea as usually the apple crumbles are baked in ramekin dishes, which makes the apple cook more but mushier. This recipe meanwhile makes the Japanese Apples keep it’s shape. Liked this idea the best ! You can also Tweak the recipe slightly according to your preference!!
I loved cooking with Japanese ingredients especially their Wagyu Beef !
