Lab Made is quite Unique indeed. They do Liquid Nitrogen ice-creams but tries to make it very Chinese themed. It definitely reminds me of Bo Innovation but just in the ice cream world. After talking to the owners a fair bit during this event, I got to know that they do experiment quite a lot with combinations but if the end flavour doesn't work or taste right, it won't be sold to customers. Talk about real Test and Trial but always exploratory. This time the theme is about Almond Roca chocolate flavor.

As part of the Event, I got to finally play with making this ice-cream myself -
Really appreciate it! I used to make ice cream a lot but have to say the Liquid Nitrogen method is a bit different than I envisaged. It’s slightly more flexible, if it’s set too hard or too soft you pour in more Nitrogen. However if the outside freezes too much, you need to warm the outer metal bowl.

Looks just like the real thing, you can taste bits of the butter crunch inside. ~ 8/10

Have to say this was a really thoughtful and well-prepared event indeed. So much fun involved. Liquid-nitrogen ice cream might be gimmicky nowadays, but I really appreciate this shop for always creating new flavours with an HK Accent as a core theme!
