I don’t shoot down on new restaurants or Udon Shops by default as understandably, kitchens in Hong Kong lack 2 major advantages during the beginning. The overall kitchens lack synchronization from the outset as most cooks work and treat there as just another occupation rather than treasuring it like a real job with a real passion. On the other side, customers expect only the best and there is no middle-ground and compromisation. Marugame Udon-Ya is a well-known Japanese chain store and was definitely decent at this price point, but one can’t help notice that it fell slightly short of the standards set by a normal Japanese Udon chain store. Especially when everything on top added up to become double the price of the original ordered Udon bowl somewhat..

Pick Your own Tempura Items -
The tempuras in Japan Udon shops aren’t always perfect at all. But in this HK shop, many of these turned out really oily and falling apart upon attacking them with mild chopstick moves… Could be better still.

Sanuki Udon with Raw Egg, Spring Onion, Fried Batter, Fried Egg & Fish Cake -
釜玉うどん, ちくわ天, 半熟玉子天, 野菜かき揚げ – $70
The udon noodles were too soft on the exterior and screams I am doubly-cooked for reheating and rather translucent. Sanuki styled udons aren’t like this in texture in general however. The additional side items were deemed decent bar one slight problem. The flakes of Agedama 揚げ玉 or Tenkasu 天かす fried dough bits were merely lose burnt flakes recovered from their flaking off other tempura items. It is just so wrong. Normal Agedama/Tenkasu are fried as round dotted dough bits specifically for that purpose but not here. ~ 6/10

Not that crispy but ok at most. Kind of soft.
野菜かき揚げ Fried Vegetables Tempura -
It might look the deal but this fell apart during my attempt to pick it up with my chopsticks and it was too tall than flattened. It could definitely be fried more golden and retaining it’s original shape. Almost seems like a make-shift solution and thrown into the oil no matter what. ~ 6/10
Shop is named after a Turtle or Tortoise -
I think they are slowly moving towards their target. There aren’t any surprises in the mean time however. As usual, someone really needs to give them a spank in the butt to wake them up and remind them we are expecting better by tomorrow! If that is not a clear message enough.
