無敵家 らーめん - (Mutekiya Ramen)


  Not to be confused with its famous namesake in Ikebukuro (Tokyo),   the new Ramen Shop on Mercer Street in Sheung Wan is a local creation and to be found only 1 street away from Sydney’s import Ryo-Tei Ramen.   Its not yet open for business at this stage but somehow I got a sneak preview of their noodles!    The official opening date is 19th of July.    Unrelated to the same named ramen-ya in Japan or the once affiliated brand of Mutekiya in Beijing which has since splitted,  the Hong Kong Mutekiya is a separate entity run by a local Japanese owner.

Hot Green Tea -
Most ramen specialty shops by default,  give out ice water or cold tea,
so one can anticipate that by giving out hot tea,  this is not purely a Ramen shop.
It is indeed a Ramen + Yakitori restaurant !

What you would find in most 南蠻 or Nanban 系,
yakitori shops.   Wonder if the grill chef once worked there!

Tonkotsu Ramen  $68
There is no Tonkoku-Shoyu ramen option here,  the original Mutekiya’s signature.  Here, you’ll find the more ubiquitous Tonkotsu version or their other ramen options.   The pork and chicken broth is a little weak for now,  and the Char Siu pork a bit tough.    The Menma Bamboo shoots and the Kikurage fungus were nice touches.    They certainly need more time to sort it out!

Home Made Tsukune Chicken Grill with Soft Cartilage & Egg $38
This was fairly good and you can really taste the cartilage and chicken.  There isn’t any detectable livers or hearts,  the basting sauce also thin and not caramelised enough.  The eggy dip was pretty good !   Would come back for this yakitori stick !
