This restaurant in Four Seasons Macau is actually a sister restaurant to 3* Lung King Heen 龍景軒 in Four Seasons Hong Kong. Not my 1st time dining here obviously as have been here quite a few times even if it is out of the way usually, but even the Abalone Puff is nearly the same as in HK side, if not actually a better version here !
梅菜牛肉腸粉 - Pickled Mustard Greens with Beef Rice Roll
Always loved the Rice Paper Roll here. Both the skin and the meat filling was lovely here.. ~ 9/10
竹筍蝦餃 - Prawn Dumplings with Bamboo Shoots
This used to carry a different veggie, a Snow Fungus to carry that required crunch. Nowadays it seemed to revert back to the Bamboo Shoot. Very good skin and thin chewy, with the right prawn texture. Actually not many places do this right nowadays at all... ~ 9/10
鮑魚燒鵝酥 Abalone and Goose Meat Puff Pastry -
This has always been good here, and the Abalone is sliced in half in the middle. The Puff Pastry is as usual buttery flaky. I actually think I like this better than the version at Lung King Heen side in HK. May be it is less sweet in the sauce. ~ 9/10
春巻 Fried Spring Roll -
This has predominantly sliced vegetables, but was fried very well indeed especially the Skin. Not greasy at all and very crispy.. Lovely for once ~ 8.5/10
芋泥鵝肝酥 - Taro Paste and Goose Liver Fried Pastry Case
This was a little drier dense than expected. I have a feeling this used less grease fat than the traditional Fried Taro recipe than the norm for a good reason. I guess this could be substituted with a bit of vegetable shortening instead to retain that bubbled up texture within ... ~ 8/10
