Ginza Japanese Restaurant 銀座日本料理鐵板燒 - (Hong Kong)

  Ginza Restaurant (銀座日本料理) inside Harbour City,  is not to be confused with the similarly named  Ginza Okura restaurant (銀座 大倉) nearby,  or Tonkatsu pork specialist Ginza Bairin (銀座梅林).   Also not with Ginza Iwa sushi restaurant on Hong Kong side (review)     It is a teppanyaki hot plate Specialist by name,  but I keep noticing another Japanese food aficionado who works inside this shopping mall and he persistently posts regular photos of his meals here,  always torturing or luring me in with his weekly sushi fixes in this restaurant.   After many months of holding back,   I couldn’t relent anymore and had to try it out for real as it was beginning to torment me on a daily basis ..

ザーサイ,  甘酢生姜 Gari,  Takuan,  きゅうりの漬物 -
Comes by default with 4 types of pickles,  and surprisingly one is a Za-Sai 炸菜 which originates from China but the Japanese version is usually milder with less spiciness like here,  it is not often given out in a sushi meal context.     The young ginger was quite potent and sugary.  ~  7.5/10

Surimi Crab and Masago Salad -  Part of Our lunch course. 
It consists of fish meat derived,  Imitational crab meat and also Capelin roes.  The former is known to be just fake crab meat,  and the latter is often sold off as Tobiko Fish/Crab roes at a premium,  which both of these together,  somehow has become one of the World’s Biggest Double Scams in history…    Wasn’t very impressed at all with this double-faux appetizer especially with the additional of mayo..  Skipped.    ~  2/10

炙り丼 – Aburi Don with Salmon,  Toro and Engawa – $290
The salmon wasn’t too fatty nor flavorful either way enough,   it became stringy after the flame blasting grilling.  The Engawa flounder skirt was pretty spot-on.  The Toro pieces were sliced slightly too thin and didn’t released much aroma in the end even after some flame-grilling action again.  This was just fair.   ~  6.5/10

Hokkai-Don 北海丼 - 
With Salmon,  Urchin,  Scallop,  Botan-Ebi prawn,  
Ikura roes,  Matsuba Crab Kani-Bara legs -  $290
The Hokkaido version of a Chirashi-zushi.   The version here was really good value for money,  especially with the large botan ebi prawn and very fresh scallops and ikura roes.  The salmon again paled in comparison just like the above dish,  as it was more bland and lean too, the sea urchins were most definitely the bigger Canadian or Californian types to cut down on costs albeit fresh enough.   Overall this was a bargain in the end.   ~  8/10

Soba in Warm Soup -
This looked nice enough but was obviously over-boiled,  retaining not much noodle texture.  The soup broth base was very spot-on to be fair with a good accurate balance..   ~  6.5/10

Cold Zaru-Soba  ざるそば -
This fared slightly better than the softish soup version above.   At least it retained some bite but however,  still not carrying enough buckwheat taste in the end.  The dipping tsuyu sauce was decently accurate,  it just needs better Timing control over the soba boiling process and perhaps the soba type selection too??    ~  7/10

Sesame & Matcha Ice Cream -
The Matcha ice-cream was strongish but also quite milky,  balanced just right without being too bitter.  The black sesame is probably easier to please the overall crowd,  but it is quite potent,   how long can this bold movement last in the longer run?     All in all, we thought this meal was promising especially with the raw seafood selections.   Although bits and pieces were either very good and generous in portions,  whilst some other aspects were only ok, I guess the main attraction of Ginza Restaurant is it’s freshness of seafood and well priced items.

Kurotaki Soba 黒滝蕎麦 (II) - (Hong Kong)

 I succumb to Japanese buckwheat soba noodles without putting up any resistance.  Call it my weakness!!   There are many types of noodles available in Japan – many of them are not known outside of Japan as they are really restricted as regional dishes.  Wish I could try out all of them one day as well.    I remember having some really gorgeous rice noodles in Japan that are served with Medicinal soup bases,  or really great Soba noodles in Fukui in Japan.  Kurotaki in Hong Kong is the only current Soba shop which grinds the buckwheats and extrude their own soba noodles from in-house,  what exclusivity!   My last visit to here was only ok but in need of more attention  Kurotaki (I),  but since it was during their new openings I once again emphasize that I will always give any place the benefit of the doubt,  just because I know kitchens always take time to synchronize to their full potential properly and this will take months to get on top of their game.   This time around,   I was much more impressed in the taste at their soba and hope I could do them justice in the end anyway.  *Note:  This shop also belongs to the Pokka Group HK,  which also runs the Tonkichi tonkatsu shop which I had just reviewed prior to this.

更科 Sarashina,  抹茶 Maccha,  田舎 Inaka Soba Trio – $88
Made in house.   The noodles were definitely more tastier than before,  so was the dipping broth,  as well as cooking consistency.  The al-dente texture was spot-on during this occasion and so addictive if you wanted a bite.   Just wished it had a better fresh grated wasabi in the end!  ~  8.5/10

Soba Soup  湯桶のそば湯 -
The Soba-yu soup was also better during this time,  filled with a boiled soba noodles buckwheat’s taste and an additional yuzu zest input of refreshing taste.   The dipping broth in volume was a bit small on proportion,  as I nearly ran out of the dipping Tsuyu.  Add on top of this remaining dip,  was the additional Soba-Yu soup to dilute the soup taste as a finish.  It could really do with more of the dipping broth from the beginning though.    ~ 8/10

Kurotaki 黒滝 (Hong Kong) - ♕♕♕ 3/4

  There has been a proliferation of Ramen shops arriving in kamikaze pilot fashion which is totally swamping the HK food scene,  so much so that I couldn’t ever catch up with eating them all,  particularly the ones found in more remote locations and often selling out before it’s even dinner time!!    To me that totally defies the spirit of a ramen ya as shops in Japan open until the wee hours for the drunken businessmen.   Soba and Udon shops in the mean time have taken a quiet back drop behind the scene,  with the only Soba specialty shop prior to here being Hita (日田蕎麥處) which is honestly not great,  and too pedestrian compared to artisanal soba shops in Japan.   This new opening of Kurotaki Soba house is a welcome change and may be I am biased as I’m a dedicated soba fan and I place it on top of the noodles food chain. (笑)   Opened by the trusted and proven Pokka and Tonkichi Tonkatsu group,  their track record with anything to do with noodles seems to have been less successful,  as their Mikichi Ramen chain in Hong Kong hasn’t won over too many fans.   I had a feeling their new Soba adventure is going to be more successful but we couldn’t help come away feeling there were still a lot to be improved on.   But as a new shop and concept,  surely one can’t condemn it to death after just days of opening.   We see scope of them improving one day and hope they will eventually arrive there when it stabilises.

Onsen Tamago Egg fried in Beancurd Skin Bag  温泉卵とイクラの油揚げ包み – $55
This came with some truffle paste as well.  I thought the beancurd skins weren’t fried enough compared to at least 2 others shops in town serving a similar dish,  and this was completely unseasoned in taste,  it really needed a bit more salt.   ~   6/10

Fried Prawns Salad   海老サラダ – $98
The prawns were decent enough,  and there were strands of fried sobas as decoration.  Decent but nothing that really wows you.   ~  7/10

Etanbe Soba  江丹別 そば - 
This is the premium soba offering here.
  It is like the doppio zero finely milled flour of the soba world.  More smooth and elastic in nature,  but probably not overly flavourful.  It’s the Rolls Royce elegant version.   The noodles were decent,  but the cold tsuyu dip was where the concern lied…   ~ 6/10

This was probably the biggest disappointment!
  Sad smile   We were just saying how the family diner Ootoya 大戸屋 already made a decent Soba,  but the dipping broth here was surprisingly devoid of much taste especially a balanced bonito broth!    It was actually worst than the store bought variety.    ~  3/10

Soba Soup 湯桶のそば湯 -
This is usually only provided at shops which make their own Soba noodles.   It is given for diluting your concentrated dipping broth,  so that you can drink the rest of the soup.   Usually applies more for Tsuke-Soba than Zaru-Soba.

Hokkaido Soba with Konbu Seaweed (知床そば),   Sarashina Soba (更科そば) -
I really liked these 2 sobas.  It might not be that much better than the dried sobas you can buy off the shelf,  but these tasted fresh and had the advertised flavours.  Good!  ~  9/10   Both of these noodles are recommendable and one of the best ones in town,  but once again,  it is let down by the peripheral supporting dishes or tsuyu dips.

Nanban Style Duck Soba   鴨汁そば -  $92
I love Duck & Leek Soba (南蛮そば),   but this is slightly different as it is more of a Tsuke (つけ) style soba for dipping into the duck broth by yourself and not already submerged into soup.   This dipping sauce was too under-seasoned and I have to add in loads more additional soy sauce to bring it alive,  and it is missing the Japanese caramelised leek flavour which is essential to this soup base!   The duck meats were also a little tasteless with big rings of fatty skin outside, sigh….   This was ok good,  but falling short here and there?   Not bad overall I guess ~  6.9/10

Tempura Moriawase with another Soba as a Set Meal -
The coating was a bit too fried and hard in coating.
Pedestrian level tempura.   Being a renowned Furai items shop in HK,  I think one should stick to the bread crumbed items like Tonkatsu or Ebi Furai.  Tempura is not it’s strong point here.   ~  5/10

Tofu with Maccha Salt, Yuzu, and normal Salt -
The soy milk used to make this was… too Vitasoy commercial flavour like.
The texture was quite runny but the taste wasn’t very natural.  Think we were kind of disappointed. ~  4/10

Honeydew Melon -
Often given out in Japanese restaurants as part of a set.
For some reason from the colours alone,  we already knew this wasn’t from Japan. 
But the mentality is like,  better than nothing?

Verdict -
This is a new opening.  I caught glimpses of hope here and there.   The soba noodles were decent enough,  but the soups and tsuyu dips seemed quite benign and below average for now.  Other supporting dishes were quite localized in taste for some reason.    Let’s just hope it won’t be another Mikichi 味吉 which is just too generic in style,  just like any neighbouring Ajisen Ramen outlets.  Fingers crossed too,   as it is getting hot in HK,  and we all need some healthy cold sobas !
